Kai AP-0305 Sharpening stone for sharpening Kai knives in the traditional Japanese, and therefore professional, way, we recommend a series of sharpening stones for sharpening.
Here you will find detailed instructions for sharpening your single or double-sided sharpening knives with traditional Japanese whetstones.
How to use:
1st Before use, soak the whetstone for about 10 to 15 minutes completely in water. Please always leave a film of water on the stone during the sharpening process.
2nd For single bevel knives, first place the cutting edge side on the whetstone. Please keep to the angle predetermined by the manufacturer. Tilt it as much as possible at an angle of 45° (to obtain the best possible surface) with light pressure on the cutting edge at the front and decrease the pressure on the cutting edge in the direction of rotation. After sharpening the knife on one side, return it and repeat the sharpening operation approximately 1 to 10 times in relation to the bevelled side.
3 For knives sharpened on both sides, carry out the same procedure as for single-edged knives, but at an angle of about 15°. The important thing is to sharpen both sides identically in order to obtain a symmetrically sharpened blade.
